Hi Alison, did you mix the chopped peaches into the cake batter or just sprinkle on top before baking? Many thanks.

If you use buttercream, then with dowels and a cake board in the middle it’ll be good!

Do you think it’s strong enough for that (with dowels)?

Oh no, a bad batch of peaches will definitely taste more bland! Fresh fruit isn’t always consistent.

It would be best to freeze the cake without the fresh cream for best results – and the sponge lasts 3-4 days x

I’m just wondering if I can freeze the cake once it’s decorated etc with the cream on? Also how many days in advance could I make the sponges before decorating and assembling the cake?

Please could you tell me if I could make it gluten free without effecting the flavour. Thanks Jane.

Hiya! You can make the sponges in advance and store them in a cool place, but with the cream it will have to be in the fridge x

My family love this cake so much I now have to bake it for my birthday. But I want to know if I can bake it 2 days in advance? I know I would have to store it in the fridge but should I not put the cream on until the day I need it or can I just put it all together and store in the fridge for 2 days? Or will the cake become soggy?
