I love the taste of this cake, it's so soft but I can't get the texture right It's so delicate-it crumbles apart when I take it out the tin. Same with the other vegan sponges too. Never had this issue with 'standard' cake. Tried different cooling times. What am I doing wrong?!

Oh my goodness! I just made this today, having never baked a vegan cake before and it’s absolutely delicious! Vegan baking is much easier than I was expecting. Thanks Jane!

I have no idea how this cake works. I’m a traditional home baker working with eggs /baking powder but needed to make my first vegan cake for friends visiting. I was blown away….This cake was just amazing it tasted wonderful and rose beautifully! Can I just ask one question, could I replace the sunflower oil with coconut oil.

Made this today with gluten free self raising flour. Very easy to make and looked wonderful when finished. Used the vegan cream filled biscoff biscuits for a different look. Can’t vouch for the taste as sent off with my son as a congratulations on degree. Hope to hear soon on what they thought.
