I weighed out 60g per cookie and managed to get 13 cookies and flattened them out really fine to wrap around the cheesecake and they turned out perfectly 😁

Add up the ingredients and divide by how many cookies – the amount of cheesecake is accurate and should be split accordingly!

Can I use entirely philadelphia cream cheese for the filling? I always find it hard to figure out what to do with leftover mascarpone, so I’d rather not buy a full tub!
