These cookies were very easy to make. They turned out moist and light. The taste was great.And they were also very much like those my grandmother used to make. Perfect treat for a cool fall or winter day.

Hi, I made these this evening and they look great and the bits I’ve tasted taste lovely (I didn’t include the chocolate) but I’m finding the underneath is still a bit gooey even though the top is cooked. Should I just leave them in the oven longer?

These sound amazing, Jane! I’m going to make them for our office Christmas get together (last year I did your millionaire’s shortbread and it was immense). When you say spoonfuls of mincemeat do you mean like teaspoons, dessert spoons, what kind of spoon?
