What a fabulous recipe!! First time making a pavlova and it was a hit! I have a small gas oven, so I had it on Gas 2 for an hour and then turned off and left in the oven overnight as you suggested. Great tip as it was hard on the outside but marshmallowy on the inside. It did crack (quite fragile) but once you dollop the cream on and arrange the berries it doesn’t matter. Will definitely do again! x

This can either be that you didn’t whisk the egg whites enough before adding the sugar, or there was something in the egg whites such as some yolk which contaminated it x

I got a great meringue mix, lots of it, piped the ring and did another tray with some meringue baskets too. They’re still in the oven and they’re already turning brown. I have a gas oven and converted your temps, which came out at Gas Mark 2, which obviously is too high. Turned the oven right down to a quarter and just hope they bake through without catching anymore 🙁
