Unfortunately mine did not work. I’m not sure what went wrong but they didn’t rise. It may have been the yeast as it had been opened a while. I hadn’t however used my dough hook before on my Kenwood mixer. How do you know when it’s had enough time kneading? I did it for about 7 minutes as per your recipe. It wasn’t sticky after the 7 minutes. Any advice would be greatly appreciated as they look delicious!

What sort of mozzarella do you recommend – grated, the harder pizza mozzarella or the soft, tearable one?

And can you do the first prove in the fridge overnight, then bring to room temperature the next day and roll/fill/prove again?
