Jaffa Cake Cupcakes!

Scrumptious chocolate and orange Jaffa Cake cupcakes with a hidden Jaffa Cake, chocolate buttercream frosting and a Jaffa Cake on top!
Jaffa cakes
Oh hey Jaffa Cakes… its been a while! In fact, I have only done one recipe using them on my blog which is a bit of a travesty to be honest! This recipe is the beginning of changing that… Jaffa Cake cupcakes!
I have had oodles and oodles of requests for another Jaffa Cake recipe and wasn’t really sure where to start… I have so many ideas and plans all of the time that I just had to randomly pick one. Cupcakes are always very popular, and I know you will all adore this recipe.
Cupcake
I thought the best base for these Jaffa Cake cupcakes would be a similar idea to my Oreo cupcakes – for these that made it a hidden Jaffa Cake at the bottom of the cupcake case, a chocolate cupcake mixture with a hint of orange flavour, and orange flavoured chocolate buttercream frosting.
Obviously, there there is a bit of decoration on top with some sprinkles and then a Jaffa Cake as well, but that’s a given! And before anyone says anything… yes I am aware that the original Jaffa Cake’s are technically apricot flavour. I went with orange.
Jaffa flavours
I wanted the Jaffa cake on the bottom of the cupcake so that there was a bit more to this bake – I didn’t fancy trying to involve jelly in this (although there is an option mentioned below where you can core out some of the cupcake and fill it with jam/marmalade instead!
I gave the cupcakes and buttercream a hint of flavour with 1/2 tsp of orange extract each so that there was a hint of flavour, but not too much to make it too much of a ‘chocolate orange’ bake if that makes sense… just makes it a bit more fun then just chocolate!
I used the basic Jaffa cakes, but there are always so many varying flavours of them now that you can use whichever you want, and then match the flavours to your choice.
Baking cups and piping tips
I used my favourite orange polka dot baking cups for these because I thought they suited the bake so so much, and I am in love! It brings out a bit more of the theme!! Obviously, the cupcake cases aren’t massively important but I try!
I also used my favourite 2d closed star piping tip because it creates the most beautiful swirl ever… I realise I pretty much only use this piping tip but that’s because I just love it beyond any other!
Tips
- These cupcakes will last for 3+ days at room temperature
- These cupcakes will freeze for 3+ months
- I use these baking cups
- I use this piping tip

Jaffa Cake Cupcakes!
Ingredients
Cupcake Ingredients
- 150 g unsalted Butter
- 150 g light brown sugar
- 3 medium eggs
- 125 g self raising flour
- 25 g cocoa powder
- 1/2 tsp orange extract
- 12 Jaffa Cakes
Buttercream Ingredients
- 150 g unsalted butter (room temp)
- 275 g icing sugar
- 25 g cocoa powder
- 1/2 tsp orange extract
Decoration
- 12 Jaffa Cakes
- Orange sprinkles
Instructions
For the Cupcakes!
- Heat your oven to 180ºC/160ºC fan and line a cupcake/muffin tin with 12 cases or put 12 baking cups onto a flat tray!
- Add a Jaffa Cake to the bottom of each cupcake (I do chocolate side up).
- Beat the unsalted butter with the light brown soft sugar until fluffy.
- Add the eggs, self-raising flour, cocoa powder and orangee extract with the butter/sugar mix until well combined.
- Split the mixture between the cupcake cases evenly.
- Bake in the oven for 18-22 minutes until baked through. Leave to cool fully on a cooling rack!
For the Buttercream!
- Beat the unsalted butter for a couple of minutes to really loosen it.
- Gradually add the icing sugar and cocoa powder on a slow speed until it is combined then speed the mixer up and beat for 3-4 minutes until fluffy and smooth.
- Add in the orange extract and beat again until smooth.
For the Decoration!
- Using a 2D closed star piping tip, or whatever piping tip you prefer, pipe the buttercream onto the cupcakes (or use whatever piping tip you prefer!)
- Sprinkle on your chosen sprinkles and add on a Jaffa Cake!
Notes
- I used the classic Jaffa Cakes but you can use any flavour you fancy!
- I also know Jaffa Cakes are technically apricot flavour jelly but I just stick with orange extract (the extract is also optional!).
- These cupcakes will last 3 days at room temperature!
- I used a 2D closed star piping tip to decorate my cakes as they get the nice swirl!
- I use these beautiful baking cups in my baking as well.

Absolutely amazing. I make cupcakes for my friends for birthdays and other celebrations but these were by far their favourites.
I decorated them with flowers and mini chocs and they looked amazing. I didnt even use the jaffa cakes 😳.

Maybe about 140 flour, 35g cocoa! x

Yes I would increase the proportions so for 3 medium eggs I do 150g, for 3 large I do 175g if that makes sense!

Omg thank you so much for posting these! Jaffa cakes are my Dad’s favourite and I can never find a good recipe it make them for him, defos doing these next weekend. Also my Mum’s favourite ever flavour is coconut and she loves cake, again I can never find a good coconut cake themed recipe, please please please can you do one?!
